20 Berry Delicious Blueberry Recipes

Blueberries are always delicious, but especially when they're fresh, in-season, and grown right here in the Pacific Northwest. And those special berries are finally here.

As with any fresh, in-season fruit, we recommend simply enjoying it as-is. But, that doesn't mean you can't have fun in the kitchen and experiment with some berry delicious recipes!

Blueberry Recipes: Breakfast

There's something about blueberries that makes them unbelievably breakfast-worthy. Maybe it's because they have the perfect amount of sweetness to get you perked up for the day, or maybe it's because they play so well with other breakfast foods. Either way, bluebs are worth eating first thing, so we've put together some of our favorite breakfast recipes featuring blueberries.

Banana Berry Baked Oats

Sweet, juicy blueberries and perfectly ripe bananas balance each other out perfectly in these baked oats.

Ingredients

  • Vegetable oil spray

  • 2 cups rolled oats

  • 1/2 cup walnuts, optional

  • 1 large banana, peeled and sliced

  • 2 cups almond milk

  • 1/2 cup maple syrup

  • 2 teaspoons vanilla extract

  • 2 tablespoons ground flax seeds

  • 2 teaspoons cinnamon

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup fresh or frozen blueberries

Directions

  1. Preheat the oven to 375°F. Grease an 8-inch square baking dish with vegetable oil spray. In a large bowl, mix the oats and walnuts.

  2. In a blender or food processor, puree the banana. Add the almond milk, maple syrup, vanilla, flax, cinnamon, baking powder and salt and mix. When smooth, pour over the oat mixture and stir to mix well. Fold in berries. Scrape into the prepared pan and smooth the top.

  3. Bake for 30-35 minutes, until the top of the oats looks dry. Transfer to a cooling rack and serve warm, or let cool completely and store, tightly covered, in the refrigerator for up to 4 days.

Savory Waffles with Blueberries and Mint

A little sweet and a little savory, this waffle recipe from Bob's Red Mill incorporates their paleo pancake and waffle mix, but feel free to sub in a traditional mix if you prefer that.

This recipe includes directions to make homemade paleo hollandaise sauce, which is always a hit during brunch.

Fresh mint and blueberries on top add a refreshing fruity element to this dish that balances out the savory sauce.

Blueberry Recipes: Savory Dishes

Though you might not think of dishes like roasted chicken and BBQ ribs when you think of blueberries, utilizing fresh berries in savory dishes is absolutely delicious! Generally, the blueberries are cooked down and used as a glaze or sauce for savory dishes. Here are some of our favorites.

Grilled Salmon with Blueberry Salsa

Salmon takes on sweet flavors incredibly well, especially when you use a squeeze of fresh citrus and a slice of butter.

Here, blueberries are made into salsa and added on top of salmon. Serve this meal with roasted potatoes and a local salad.

Ingredients

  • 4 4-ounce salmon fillets

  • 1/2 teaspoon chipotle pepper powder

  • 1 tablespoon olive oil

  • Pinch of salt

  • 1 cup fresh blueberries

  • 1 large jalapeño pepper, finely chopped

  • 2 tablespoons finely chopped red onion

  • 1/4 cup chopped cilantro

  • 1 tablespoon lime juice

  • 1/4 teaspoon salt

Directions

  1. Heat the grill. Place the salmon skin-side down on a plate and rub with olive oil, sprinkle with chipotle pepper and salt; let stand.

  2. In a medium bowl, combine the blueberries, jalapeño, red onion, cilantro, lime juice and salt. Stir vigorously, coarsely mashing some of the blueberries to release the juice.

  3. When the grill is hot, use tongs to swab the grate with a paper towel dipped in vegetable oil. Place the salmon on the hot grill, skin-side up. Let the salmon cook until it has grill marks and the edges look browned, about 3 minutes. Carefully lift each fillet and turn over. Close the lid of the grill and cook about 4 minutes more for thin, wild-caught fillets, longer for farm-raised salmon. When the fish is just cooked through, transfer to a clean platter. Top each fillet with about a quarter cup of salsa, and serve hot.

Blueberry-Glazed Ribs

Here's another recipe that transforms fresh blueberries into a sweet glaze for a savory dish.

Sweet and sticky ribs are no new concept, but using fresh berries as opposed to a pre-made BBQ sauce is definitely not the normal method.

The best part about this rib recipe is that you don't even need a grill. Your oven's broiler will do the job!
